Over 70% of the body’s immune cells are in the digestive tract; these cells are known as GALT, gut associated lymphoid tissue. GALT is composed of lymph tissue, lymphocytes, and epithelial cells that acts as an important defense for the body against foreign pathogens such as bacteria, fungus, and viruses. B lymphocytes and T lymphocytes located in this lymph tissue are integral to innate and adaptive immunity. M cells in the GALT also regulate oral tolerance, the defense for potentially immunologic dietary substances through antigen uptake.
While GALT plays a major role in defense of the body, it is also part of the enteric nervous system. The enteric nervous system (ENS) is a concentration of 200-600 million neurons that mirrors aspects of the central nervous system (CNS) and works both autonomously and in concert with the central nervous system, parasympathetic and sympathetic. The enteric nervous system connects the entire digestive system from the upper esophagus to the lower large intestine.
